Portland - Pt. 1

This past weekend we went to Portland for my best friend from Middle schools wedding. We had never spent much time in Portland, just quick days passing through on tour. But we really fell in love with it this weekend. So many cool restaurants, shops, and a great assortment of doughnuts, which is enough for any city to win me over. Since it's only about a 5 hour drive from home I think we will come back to visit more often, maybe take the train down next time.

We stayed at the oh-so-cool Ace Hotel Downtown. There is so much thought put in to every trendy little detail. The lobby is open to the public to enjoy with a huge rustic coffee table convered in amazing succlent arrangements, comfy green couches, bikes to rent, an old school photobooth and Stumptown Coffee connected next door. Our room was wallpapered with pages form an old novel, a sliding barn door instead of curtains, and even the fire escape plan on the back of our door was stitched onto canvas. If your looking for somewhere to stay, or just spending the day downtown, you must pay it a visit.

We had a fun time all snuggling in together with Poppy sleeping in between us as night. At home she sleeps in her own room so it was fun to get to cuddle her all night, I definitely couldn't sleep as deeply because of constantly worrying one of us was smothing her with pillows. But for the weekend it was a treat! David said that hearing her drink milk in the night is the cutest thing she's ever done.

I'll share more about all the places we went around town in pt. 2.

November Walk

It has been too long since our last "walks" post - long before Poppy was even born. Walks are one of our favourite things to do as a family, especialy since we live in such a pretty area with a big park at the end of our road. Sometimes I wish that we lived in the city and could walk out out door and stroll through shops and cafes. But I really love this peaceful area, and big trees... I don't think I could trade it.

Last week the most adorbale handmade matching toques arrived from Lyndsay of The Seam Designs showed up at our door just in time for the freezing cold weather. Take a look at her etsy shop because she makes some adorable and cozy crocheted winter goodies.

My Wildbird

Poppy is just about 10 months now, and I have been wearing her since she was just a week old. It has always been one of my favourite things. We feel close and connected, and it lets me get everything done around the house, or run into the grocery store with both hands free.

I like to share my favourite baby products and that definitely includes my wildbird sling. Its quick to throw on when I'm in a hurry, I just slip it on and plop that cute little booty in there. The thick linen is comfortable and doesn't stretch out, which is nice because Poppy doesn't get lower and lower the longer she's in there. Check out the Wildbird Shop that launches today.

David Love

I recently recieved this custom gold "David" necklace from www.janebasch.com, I love it so much. I am all about everyday jewellery that you can wear with everything and not take off except to sleep. This name necklace is perfect for that because it so delicate and sits at just the right height. Here is the link to the one I'm wearing, it would be a perfect christmas gift for any girl on your list.

Vegan Salted Chocolate Chip Cookies

Vegan baking is always hit or miss, so when i find a hit, I don't loose that recipe! This is a chocolate chip cookies recipe I found on www.dailyrebecca.com and just made a couple adjustments to.

Here is the recipe from www.dailyrebecca.com  and below I added my additions.

Author: veganhousewives.com
Recipe type: Dessert/Vegan
Prep time:  10 mins
Cook time:  20 mins
Total time:  30 mins
Serves: 12-15 cookies
  • ½ cup coconut oil
  • 1 cup brown sugar
  • ¼ cup almond milk
  • 1 tablespoon vanilla extract
  • 2 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 cup vegan chocolate chips (Trader Joe's chocolate chips are accidentally vegan!)
  • **2 Tbs Ground Flax Seed
  • **6 Tbs Water
  • **Coarse Sea Salt
  1. Pre-heat oven to 350 degrees
  2. Cream (aka thoroughly mix) together the coconut oil & brown sugar, then add the almond milk & vanilla. The mixture may be really "liquidy" this is OK.
  3. In a separate bowl mix the flour, baking soda, baking powder and salt.
  4. Combine the wet & dry ingredients (it WILL BE crumbly - this is OK), then fold in the chocolate morsels & any other mix-ins of your choosing.
  5. Roll into Tbsp sized balls & place them on an ungreased cookie sheet (or on a sheet of parchment paper on the baking sheet), then flatten them out a bit with your palm. The dough may be a little crumbly, but just smoosh it together and it will work fine!
  6. Bake for 7-10 minutes. (I did 8 which was perfect)

**I added a flax egg (2 Tbs Ground Flax Seed + 6 Tbs Water - let sit for 5 min) because the dough was very dry, I couldn't get it to stick together. But this made it perfect.

**I also added coarse sea salt sprinkled on top of the cookies before putting them in the oven, anything with chocolate tastes better with sea salt to me!
